Healthy Eats: For Goodness Sake

This is the latest (outta my head) creation. This dinner was truly tasty! I was finally able to successfully cook tofu. I couldn’t believe I got my kid to eat both of these things. Must have been good!!!


•• Spicy tofu patties (with Cayenne pepper, scallions, roasted corn, two egg whites, whole grain quinoa flour, and garlic olive oil) and roasted potatoes (topped with cilantro and lime juice).••
