Blacked Mahi-mahi Soft Tacos with Mango Salsa

These blackened Mahi-mahi soft tacos were awesome. All the ingredients were organic and the fish was sustainable. The Mahi-mahi was coated with Cajun spices, pan seared, then wrapped in foil and placed on the grill for a bit. The tortillas are a corn and whole grain wheat blend.

I topped the tacos with sprouted arugula and mango salsa. The salsa also had: basil, heirloom tomato, scallions, garlic salt and chili oil. It was a good, protein packed dinner. Tomorrow I’ll hit shoulders and traps!
