Caramel Apple French Toast

February 28, 2017

*I seriously have to try this myself sometime soon. I sliced the apples thin then topped the toast with hot, salted caramel sauce and cinnamon. Yum!*

Thanksgiving Eve

November 26, 2016

We had a good Thanksgiving dinner. I had the guys make farolitos and we made a fire, so it was cozy. I love candles and had 50+ strewn about the living room. They highlighted my mythology table, dragonology table and wizard corner. I made some cute center pieces that were easy to make. We all contributed food, but I made an orange and honey glazed ham, bacon corn, honey glazed carrots, sweet potatoes with candied pecans, Jim Beam honey bourbon apple cider with cinnamon sticks, a smoked oyster and cheese platter, and toasted pistachio pudding. I think the pudding was a big hit. I had Mike torch it so the marshmellows, sliced almonds and turbinado sugar got toasted up. That was good!

Guard Well Your Treasure

November 4, 2016

“Guard well within yourself that treasure, kindness. Know how to give without hesitation, how to lose without regret, how to acquire without meanness.”
•~~George Sand

Tonight we took my son and his friend to eat at Taco Bell, before hitting Whole Foods. While the two boys ate, a young lady who worked at Taco Bell sat near us in the corner. She was sitting quietly eating a burrito on her break.

Once the boys were done eating, we all got up to head out. When I turned around toward the door, I noticed another young woman behind me. She had come in from the rainy, dark night while my back was to her.

As I passed by, I looked at her life strewn across two tables. She had laid out a brush, lotion, a book, and several other things. What got me, was the packet of Ramen noodles because I was sure she had no home to go to. I thought… “does she even have a pot to cook those in?”

She was wet and looked tired from carrying a huge, old backpack. I’d say she was 100 pounds. She didn’t even notice me because she was stuffing herself with what I assumed was Halloween candy. Walking out to the car, I asked my son “did she even eat?” I didn’t know since my back was to her. He said “no… she didn’t.”

I turned right around and walked back in. When I approached her she looked worried… like I was going to tell her to leave. I asked her if she wanted food and she got a huge smile and said “yes! Please! Can I get a chalupa?” I laughed and said “of course, get whatever you want girl.” She got “a meal” too.

While the young girl who worked at Taco Bell rang it up, the other girl asked me what my name was. I told her and asked her hers. She thanked me and shook my hand with a smile. I told her “be careful out there girl. It is dangerous and it’s getting cold.”

I feel good about doing nice things for people, especially those in need. What made me feel even better is what happened after that. When the young girl working at Taco Bell gave me my card back, she said “can you give me a moment?” I said “sure,” but was thinking… “I thought she gave me my receipt?”

She disappeared then came back with a bag. I said “what’s this? I didn’t order anything else?” She had given me a free bag with dessert and told me “that was really sweet of you. This is for you.” I thought that was cute. I guess you never know who’s heart you’re touching with a good deed.

Homemade Meatball

October 15, 2016

Yummy…. best sandwich  I’ve made in a while. Nothing like organic cheats! I love Whole Foods. The meatballs were baked. They were made with 95% lean, fresh Romano cheese, two egg whites, garlic salt and garlic marinara sauce. I slapped the meatballs on some fresh white (oh no) bread with melted Munster cheese. I topped that with thinly sliced red onion and green bell pepper + avocado! Yeayyyy! Now that’s a chest day cheat people.

Cheesy ~n~ Clueless

September 28, 2016

Wowwwww… now I can say that I’ve seen it all. Really?? They are selling “Muscle Mac” now? Wtf… when I saw this on the grocery store shelf,  I realized how marketers brain wash people who are clueless about proper nutrition. “Performance nutrition for active lifestyles.” Omm… yeah… eat this in support of muscle if you can actually move after you eat it.  Maybe they should call this “Zero Muscle” instead? Shoots… I’ll just eat me up some regular mac knowing I’m bulking lol.

RATS DON’T FALL 4 IT, even tho cheese be hella good 🙂

Rock Out Trippy Trip

July 25, 2016

~Custom digital composite I designed for our ticket packets.~

~Elaine, Me and Cheryl (my gym gals… these chicks can squat, dey smart and dey hot too!)~

It was a blast to kick it with what Bobby called “the Mandrill’s Crew” from 2pm on Friday ’til close to 2am on Saturday morning. I was glad I took Friday off because I had so much to do! It was awesome and not surprising to find each and every one of the crew for that evening in the gym before we rolled out. It was like roll call up in there lol. Before we hit the gym, we rented a Ford “Flex” (no pun intended) SUV so we could fit 6. Thanks to Scott for having our back on that!

That concert seriously rocked out! It was such a blast. I went to see In This Moment and loved them, but Korn had stolen that show the minute they stepped on stage. It’s no secret that Korn’s bass player is sick, but that night, he and the rest of his band members reminded the audience what years of experience sounds like. Yup… bad ass… that’s what it sounds like. Fieldy’s green and black gutiar was smokin’ with that deep, deep bass.

~Ahhhhhhhhhhhh… yeahhhhhhhhh….. it’s Fieldy on dat bass!♥~

That night we also witnessed Zombie’s guitarist play the National Anthem with his mouth while American flags waved on the big screen!! No joke… that was tight. They also had a gutiar that was clear and filled with what seemed like fluorescent liquid and glow in the dark stuff. Korn’s rendition of Metallica’s “One” was also awesome. I don’t know, but we were jamming out up in there!

~Sum dinny din and sum dranky drank. From left to right: the back of Mike’s head lol, Jared, Elaine, Bobby, Cheryl and Me. Da boyz didn’t drink.~

~This was our “To the Death” toast. No matter what… we will be in the gym. Elaine and I had on our matching bracelets for the concert and wanted a toast with them.~

We had a straight blast. I embedded some concert footage off my YouTube channel on the post below. They are worth a watch. In the first clip, you’ll hear Rob Zombie talk about how when he and White Zombie broke up, Albuquerque was the first city he visited alone.

Until next time…

Coconut Flour Protein Cups

May 30, 2016

It’s back to career world tomorrow, but I’ve been hard at work over the last week in the gym. Today I prepared my breakfast for the rest of the week. I also shrugged the heaviest barbell (110 lbs) for 12! Reps baby!! Made each of these bad boys with a tablespoon of potatoes (next time I’ll use sweet potatoes), two egg whites and a thin, organic, coconut flour crust. I’ll eat three each morning through Friday. They came out delish! This is actually my own recipe because I just make shit up, but here are four good recipes from Bodybuilding.com.

Buzzed

May 7, 2016

It is so good to know genuine people who have such good hearts. If you throw thoughtfulness, beauty and fitness into that equation, that makes someone even more special. Thank you to Christina for thinking of me on Mother’s Day weekend. She is gorgeous, fit and super creative. Even though she wasn’t at the gym today, she knew I’d be there, so she sent me a gift with her husband.

Her husband is a personal trainer who delivered me a handcrafted, amazing gift today from one mother to another. It was a clear box housing a homemade sugar cookie beehive. I got buzzed!! Hahaaaa. I told her husband… “tell her these are unbelieveable and awesome. Thank you and that I’ll owe her a few pounds for this!!” He laughed. Good hearts are hard to come by.

Japanese Delight

May 1, 2016

Loving Japanese eggplant is easy. I made this casserole with a lot of organic, 95% lean ground beef, Japanese eggplant slices, diced tomatoes, fat free ricotta and a little bit of shredded cheese. Eggplant is very low in calories and is a high source of dietary fiber + vitamin C, folate, potassium and other minerals. This nightshade plant is great for digestive support and is high in antioxidants. This was delish!

Help Me!!

April 28, 2016

Last Friday, my friend set me a pic of her eating a cookie after work. I was eating dinner at Jinja, so I sent her a pic of me eating tempura. It was so good, but I did pay. There’s a reason it isn’t healthy to eat that crap!!
